Pumpkins

Do not puree pumpkins, only can cubed pumpkins.

Plain ol' Pumpkins

Remove skin and cube pumpkins, about 1 inch squares. Put in pot and cover with water. Boil about 2 minutes. Place pumpkin in quart jars and cover with boiling water, leaving 1 inch headroom.

Process for 90 minutes at 10 pounds of pressure when at 1000 feet, 15 pounds of pressure over 1000 feet.
