Strawberry Jam

2 pounds hulled strawberries
4 cups sugar
1/4 cup lemon juice

Crush strawberries. Add all ingredients to a pot and mix. Heat slowly while stirring until sugar dissolves. Bring to a full boil, stirring constantly. Lade into jars leaving 1/4 inch headroom.

Adjust lids and process in a boiling water canner 5 minutes at 0-1,000 feet altitude; 10 minutes at 1,001-6,000 feet; 15 minutes above 6,000 feet.
