Plain ol' Corn

Use fresh picked corn. Husk, silk, and wash ears. Blanch ears in boiling water. Cut corn from cob, do not scrape cob. Place corn in pot. For each quart of corn add 1 cup of boiling water. Simmer 5 minutes. Put corn in jars and cover with boiling water, leaving 1 inch headspace.

Process for 85 minutes at 10 pounds of pressure when at 1000 feet, 15 pounds of pressure over 1000 feet.
